Chipotle Ginger Coconut Crusted Tilapia2 tilapia loins
Egg white
4 tablespoons unsweetened coconut
Chipotle powder
Paprika
Ground ginger
Cinnamon
Truvia
Onion powder
Garlic powder
Salt and pepper

Preheat oven to 375 degrees. Grease a pan with coconut oil. Combine seasonings in desired amounts enough for two loins. Coat loins in egg white then season both sides with coconut mixture. Place loins on greased pan and bake for 30 minutes. Internal temperature should be at least 145 degrees. Served with brown rice (cooked according to box with ground ginger, coconut, and splash of almond milk added).
