Turkey Shepard's Pie

A great use for leftover meatballs and cooked sweet potato!

1 cooked turkey meatball
1/8 cup frozen mixed vegetables
1/8 cup mashed sweet potato
Salt
Chipotle pepper

Chop cooked turkey meatball and place in the bottom of a greased ramekin (I used olive oil spray).  Layer frozen vegetables on top of turkey.  Sprinkle with a tiny bit of salt and chipotle pepper to taste.  Top with sweet potato.  Bake on cookie sheet at 375 degrees for 45 minutes or until top of pie is lightly toasted.
