Brown Rice Pudding

Tons of protein and no added sugar in this yummy fall dessert.

1 whole egg
3 Tablespoons egg whites
1 teaspoon vanilla
1/4 cup unsweetened vanilla almond milk
1 teaspoon Truvia
1/2 teaspoon nutmeg
1 cup instant brown rice
1/4 cup unsweetened vanilla almond milk

Beat egg and egg whites  Then add liquid ingredients, reserving 1/4 cup almond milk.  Add dry ingredients, mixing rice in last.  Divide mixture into 3 lightly greased ramekins.  Bake on cookie sheet for 20 minutes at 350 degrees.  Add remaining almond milk and bake for 20 more minutes.

Makes 3 servings.  Per serving (130 calories, 9g protein, 1g fiber, 16 carbs, >1g sugar)
